Burgundy operates on a *climat* system: each named vineyard plot has its own classification and rules, some less than a hectare in size.
The reference wine for coq au vin (Pinot Noir) and the reference white for pretty much every European fish course (Chardonnay). Burgundy’s climat mosaic — over 1,200 named vineyard plots inscribed as UNESCO World Heritage — is the densest expression of terroir as a concept anywhere in viticulture.
