Yangzhou Fried Rice

Break up the cold rice with your hands or a wooden spoon so there are no clumps.

  • 800 g cooked day-old jasmine rice (cold from the fridge)

the protein

  • 150 g char siu (Cantonese roast pork), diced (or substitute Chinese-style cooked ham)
  • 150 g small peeled shrimp
  • 3 large eggs, lightly beaten

the vegetables

  • 150 g frozen peas (no need to thaw)
  • 1 small carrot, finely diced (5 mm cubes)
  • 4 scallions, finely sliced (whites and greens separated)

the aromatics

  • 2 cloves garlic, minced

the seasoning

  • 1 tbsp light soy sauce
  • Sea salt to taste
  • 1/2 tsp white pepper

the finish

  • 1 tsp toasted sesame oil

the cook

  • 3 tbsp neutral oil (peanut or vegetable)
